Thanksgiving came and went in the blink of the eye it seems, and my fridge is overflowing with leftovers.
And for that, I’m definitely not sorry!
I always make a lot more food than we’ll eat, because what’s better than Thanksgiving?

We spend all that time in the kitchen cooking, so we might as well stretch it out as far as our waistbands will allow, am I right? 😉

This year I went the super easy route and made all our side dishes ahead of time. This way all I had to do was reheat everything in the oven, and call “not it!” for doing the dishes.
It was very low key but still delicious holiday.
Typically I make mashed potatoes or scalloped potatoes as a side, but this year I wanted to mix things up a bit and this easy cheesy cornflake potato casserole was born.
It was great having some crispy texture on top of all the richness of the potatoes other sides, and I’m positive we’ll be making it again for Christmas.
I used a mandolin to slice the potatoes paper thin. Then tossed them in a rich creamy and cheesy sauce.
They held up in the fridge beautifully overnight and then topped them with cornflakes right before popping them in the oven.

Description
Easy cheesy cornflake potato casserole was a hit on our holiday table and is the perfect side dish for any meal, holiday dinner or potluck.
Ingredients
- 5 lb. bag of Yukon Gold potatoes
- 1 medium yellow onion finely chopped
- 1 10 1/2 oz. can of Cream of Celery Soup
- 1 10 1/2 oz. can of Cream of Chicken Soup
- 2 cups shredded Cheddar Cheese
- 1 Tablespoon onion powder
- 1 teaspoon each salt and pepper
- 2 cups corn flakes cereal
- 2 Tablespoons softened butter
- dry parsley for garnish* (optional)
Instructions
- Preheat oven to 350 degrees F.
- Slice potatoes thin using a mandolin or knife and add into oven safe casserole dish
- Chop onions, add into casserole dish along with the soups, cheddar cheese, and seasoning.
- Give everything a good mix until potatoes are nicely coated
(If making ahead- cover and put in the fridge at this point)
5. Top potato casserole with corn flake cereal and dab the top with softened butter.
6. Bake in the oven for 45 minutes and garnish with dry herbs if desired.
Cheesy corn flake potatoes go great with turkey, prime rib, and brunch food like quiche.
Notes
*If making ahead of time, don’t add cornflakes until you’re ready to bake.
** This will store great in the fridge for up to two days or 3 months in the freezer if sealed properly. Defrost prior to baking in the oven, and add an additional 10-15 minutes to cook time.
