You’re wrong. These smashed potatoes are my top secret side dish that I decided to spill the beans on. Because it’s Christmas! And you deserve to have amazing potatoes to go along with your prime rib. 🙂
Every time someone tries these, they ask how my potatoes are so flavorful. There’s a secret to them…
They aren’t just potatoes…
I throw other things in the water as they’re cooking so they can absorb the flavor, and it’s worth the extra step. 🙂

Onions and garlic.
I throw them into the water to flavor it while the potatoes cook. It also softens them and tones down the flavor so when they’re smashed together with the potatoes, they don’t over power them.
You can definitely do this with mashed potatoes too. I just prefer leaving the skin on potatoes and smashing. It saves me time, plus I enjoy the texture but it’s all personal preference…
And then of course you need to add in the things that make potatoes so creamy and delicious…
Butter, cream, sour cream…

Here’s how to make them…
PrintGarlic Chive Smashed Potatoes
- Prep Time: 10 minutes
- Cook Time: 25 minutes
- Total Time: 35 minutes
- Yield: 6 people 1x
Ingredients
- 3 lb. bag of red potatoes (can leave skin on for smashed or peel for mashed)
- 1/2 yellow onion (chopped)
- 3 large garlic cloves (chopped)
- 1/2 cup half and half
- 3 tablespoons butter
- 1/2 cup sour cream
- 2 tablespoons chives
- salt and pepper to taste
Instructions
- Fill a large pot with water and place on stove. Add salt to the water. Cut potatoes into equal chunks and place in water.
- Turn the stove on and allow potatoes to cook for 15 minutes.
- Add in your chopped onion and garlic to the boiling water and cook for an additional 10 minutes.
- Strain the potatoes and set aside. Put the pot back on the stove and lower the heat to low. Add in butter, cream, and sour cream. Mix until all melted together.
- Add your potatoes back into the pot and smash everything together until desired texture. Season with additional salt and pepper to desired taste and mix in chives.
- Serve hot. Enjoy!
