Olive and Parmesan Salad Dip served with Baguette is a savory that’s soon to be the most requested appetizer to bring to any holiday party or get together!

Do you have a go-to appetizer recipe that you are known for? The one that everyone expects you to bring to every family gathering or holiday party?
This olive and Parmesan salad dip is mine.
I can’t take full credit for this though. It was one of my mom’s friends that served this all the time when she hosted something, and over the years I’ve tweaked it to make it my own.
It’s SO good served with a crusty baguette and some wine.
But I also use it as a sandwich spread and salad topper as well. There’s so many versatile uses for it, and if you love savory, salty things then you will absolutely adore this recipe!

I always make a big batch of this Olive and Parmesan Salad Dip and keep it in the fridge.
The longer it sits, the more the flavors marry together so even if you are serving this for a party, I recommend making it the day before.

This would also make a fantastic pasta salad! Hmm..I might actually do that for dinner.

- Prep Time: 10 minutes
- Cook Time: 5 minutes
- Total Time: 15 minutes
- Yield: 20 people 1x
Ingredients
- 2 cans sliced black olives
- 2 jars sliced green olives with pimentos
- 6–8 cloves fresh garlic (minced)
- 1 wedge parmesan cheese (cubed) (*around .50 net weight)
- 1 cup olive oil
- 1 tablespoon anchovy paste
- 1 tablspoon fresh thyme
- 1 teaspoon fresh parsely
Instructions
- Drain olives, and add them into a large mixing bowl.
- In a small saute pan, add olive oil and heat it up on medium. Add anchovy paste and stir until it dissolves.
- Mince garlic, and chop herbs and add it into the oil. You don’t want to cook it too long, just a minute, until you can begin to smell the garlic, then remove the pan from the heat.
- Pour the olive oil into the bowl with olives and mix everything together.
- Cut parmesan into small cubes, and add it into the olives, toss together and set aside so flavors can marry. You can serve this right away or store in the fridge until ready to serve. It’s best at room temp. Enjoy!
