This easy recipe always surprises me when I make it for others. People always oooooh and ahhhh over it and think I slaved away in the kitchen creating this complex flavor profile when in reality I usually always have these ingredients on hand and in a pinch can whip this salad together in oh, about 5 minutes.
Creamy dill cucumber salad is such an old fashioned BBQ or picnic side, but that’s what makes it so perfect! It brings this nostalgic feeling to the table, and never disappoints! Even kids love it, which says something…I mean….What kid doesn’t love cucumbers and dip? This is it in salad form…
Here’s what you’ll need to make it yourself {serves about 6}
- 2 English cucumbers
- 1 cup of sour cream
- 1/2 of a medium sized red onion
- about a 1/4 cup fresh chopped dill
- 3 tablespoons of white wine vinegar
- 2 garlic cloves, finely minced
- about a teaspoon each of sugar, salt and fresh black pepper
- Slice your cucumber and red onion as thin as possible…I put the cucumber down the tube of my food processor with the slicing blade and it does the work for me. Then I’ll slice the red onion myself.
- In a small mixing bowl add your sugar, then the vinegar and mix together until it dissolves. Now add in the sour cream, garlic and dill, mix well.
- Add your cucumbers and onions to your serving bowl and pour the dressing over top, toss together and sprinkle with salt and pepper.
- Refrigerate no more than an hour before serving so it wont get soggy.
And just like that you’ve made the simplest most delicious side dish for your backyard BBQ this summer that will make you feel like you’re back in time, yet still modern and fresh enough to serve to guests. Sometimes it’s best to not mess with the classics, ya know? 🙂
I love to rip off a few fresh dill ferms and sprinkle then around to garnish. It just makes the salad pop.
