This lettuce wrap salad is a super easy meal to make when you’re looking for something low carb! Eating salad doesn’t have to be boring when it tastes this good…
I love making lettuce wraps when I’m trying to eat healthy, but sometimes it doesn’t feel like enough food, especially when you make it for dinner.
That’s why I started eating it as a salad. Maybe it’s just my mind playing tricks on me, but it feels more filling this way. 🙂
We’ve been eating kind of heavy the past few days (hello bacon cheeseburger soup!) so I wanted something light and fresh for lunch to get me back into healthy eating mode.
While I’m definitely a chilly weather lover, I do notice that this time of year I tend to eat heavier things. Does that happen to you too? 🙂
This lettuce wrap salad is so satisfying though, so you don’t feel like you’re depriving yourself of anything.
It’s also a great lunch to pack for work because it won’t get wilted. The “dressing” is basically the ground chicken because it has so much flavor. You don’t need to add anything else.
This recipe is basically the same as the lettuce wraps I normally make but I add in a couple of different things since theres no dipping sauce for this.
Here’s how to make it…

- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- Yield: 2 salads 1x
Ingredients
- 1 lb. ground chicken
- 1 yellow onion (chopped)
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon chopped cilantro
- 1 tablespoon minced lemongrass (get the one in the tube-easier)
- 2 tablespoons oil (I use coconut)
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon fish sauce
- 1 tablespoon red pepper flakes
Instructions
- In a large skillet, add in your oil to heat up and add in your ground chicken. Crumble it with a spoon as it browns (3-5 minutes)
- Add in your chopped onions and cook for an additional 2-3 minutes.
- Add in the rest of you ingredients and cook while stirring for an additional 5 minutes or until meat has absorbed all the flavorings. Place in a bowl and set aside to come to room temp.
- Assemble your salad just as you would a lettuce wrap. butter or iceberg lettuce, then meat and whatever toppings you like. I use green onions, carrots, red pepper, and water chestnuts in mine. Enjoy! 🙂
