Seriously though, I had bought smoked salmon for New Years Eve appetizers and had some left over that I didn’t know what to do with.
So I threw it in a soup…and It came out pretty good! 🙂
If you love smoked salmon then you will love this!
Honestly I made it on the lighter side though by substituting cream for low fat milk but I’m calling this a chowder anyway because if I wasn’t trying to eat better I would have made it like a traditional chowder. Which is how I’m going to put the recipe below.
If you follow the recipe, yours will probably come out even creamier than the photos and probably more delicious. 😉
But if you want to make it on the lighter version like I did, than just omit the cream, flour, and butter part. Just pour in some low fat milk instead.
I love coming up with simple soup recipes this time of year! It’s always nice to have something simmering on the stove when the weather gets chilly so anyone can just grab a bowl and help themselves.
Here’s how to make it…

- Prep Time: 10 minutes
- Cook Time: 40 minutes
- Total Time: 50 minutes
- Yield: 8 servings 1x
Ingredients
- 4–5 slices prosciuotto
- 6 oz. smoked salmon
- 8 yukon gold potatoes (diced)
- 1 yellow onion (diced)
- 2 cloves garlic (minced)
- 1 box chicken stock
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 cup heavy cream
- 1 teaspoon dried dill
- 1 tablespoon dried thyme
- salt and pepper to taste
Instructions
- Preheat stove to medium. Dice prosciutto, onions, and garlic. Add in 2 tablespoons butter to the pot and sweat your onions, prosciutto and garlic for about 5 minutes.
- Dice your potatoes while those are cooking and add them into the pot. Sprinkle in 2 tablespoons flour into the pot and stir until its evenly coated.
- Pour in you chicken stock, season with salt pepper, dill and thyme, and cover pot to cook for about 30 minutes.
- Flake your smoked salmon or dice it and add it into the soup along with the cream. Cook for an additional 5 minutes and then serve.
