Smoked Salmon & Potato Chowder

Ingredients

  • 45 slices prosciuotto
  • 6 oz. smoked salmon
  • 8 yukon gold potatoes (diced)
  • 1 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 box chicken stock
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/4 cup heavy cream
  • 1 teaspoon dried dill
  • 1 tablespoon dried thyme
  • salt and pepper to taste

Instructions

  1. Preheat stove to medium. Dice prosciutto, onions, and garlic. Add in 2 tablespoons butter to the pot and sweat your onions, prosciutto and garlic for about 5 minutes.
  2. Dice your potatoes while those are cooking and add them into the pot. Sprinkle in 2 tablespoons flour into the pot and stir until its evenly coated.
  3. Pour in you chicken stock, season with salt pepper, dill and thyme, and cover pot to cook for about 30 minutes.
  4. Flake your smoked salmon or dice it and add it into the soup along with the cream. Cook for an additional 5 minutes and then serve.
