One of my favorite things about summer is being able to enjoy eating outside with friends. Every weekend becomes an event of some sort, and its a great time to try out new recipes that are easy to put together in a pinch with ingredients you already have on hand. Salads of any variety are always going to be a hit and can be be prepared even a few nights ahead to make things easy on yourself too.
The perfect summer potato salad consists of potatoes and a variety of fresh, cool, and crisp veggies married together in a creamy sauce. It’s absolutely delicious with anything you pair it with too! Especially served with these fall off the bone ribs or bacon wrapped chicken legs.
I’m a sucker for colorful food. We always eat with our eyes first so I love adding a variety of textures and colors into my salads, and this potato salad is no exception. 🙂
Perfect Summer Potato Salad

Description
Whether its a backyard BBQ or a church pot luck, this summer potato salad is the perfect side dish to bring!
Ingredients
- 1 lb red potatoes
- 5 hard boiled eggs (chopped)
- 1/4 cup carrots (shredded)
- 1/2 cup celery (chopped)
- 1/4 cup red onion (chopped)
- 1/2 cup sweet baby peas (thawed from frozen)
- 3/4 cup mayo
- 3 tablespoons Dijon Mustard
- 3 tablespoons sweet relish
- salt and pepper (to taste)
Instructions
- Cut and cook your potatoes in salted boiling water until fork tender. Then drain and set aside to cool.
- Chop up the rest of your potato salad ingredients and add into a large bowl with the mayo, mustard, and relish. Give everything a good mix until completely combined.
- Cover and refrigerate until time to serve.
