Stuffing Stuffed Mushrooms

These stuffing stuffed mushrooms are the perfect appetizer or side dish to serve for Thanksgiving! They’re a great way to use up leftover stuffing as well!

I’m obsessed with mushrooms. I could eat them every day and am always trying to find ways to sneak them into my recipes.

When my daughter was a toddler I would saute up some mushrooms with garlic and thyme and feed them to her as an afternoon snack. No kidding! The kid at two years old loved her shrooms. 🙂

She still eats them now, but they’re not her favorite thing. Most times we eat them as a side to steak or in a pasta. I do love them in this salad, too! YUM!

But probably my favorite way to have them is stuffed. I love a great stuffed mushroom recipe to serve up at parties during the holidays, don’t you?

It’s a super easy appetizer and is very filling and satisfying for a crowd!

My go-to recipe for stuffed mushrooms are these sausage stuffed marsala mushrooms (which are AMAZING) but since I had some leftover stuffing from when I made my Thanksgiving soup the other day I decided to use it up this way.

You guys.

So, so incredibly tasty! I think I’m going to serve up the stuffing for Thanksgiving this way from now on!

I just used a box mix, but if you have your own amazing recipe then go for it! 

You may also like  Olive and Cheese Salad

The only thing additional you’ll need is some cream cheese and parmesan cheese. Fresh herbs too if you want to get fancy 😉

Here’s how to make them…

Stuffing Stuffed Mushrooms

  • 24 baby bella mushrooms
  • 1 cup stuffing
  • 1 garlic clove (minced)
  • 2 tablespoons cream cheese
  • 1/4 cup shredded parmesan cheese
  • fresh thyme (*optional)
  1. Preheat over to 375. Remove stems from mushrooms to create caps.
  2. In a bowl, mix stuffing, cream cheese, garlic, and half of the parmesan cheese together well.
  3. Stuff mushrooms with the mixture and top with the remaining parmesan cheese, and fresh thyme.
  4. Bake in oven for 20-25 minutes. Serve hot-room temp.
