This creamy dijon chicken pasta with sun dried tomatoes and spinach is the perfect meal any night of the week!
The other day when I made the Creamy Dijon Chicken I decided to make it again, but this time in pasta form with some other things I found in my fridge.
The sun dried tomatoes really added a nice sweetness up against the tangy Dijon sauce. I’ll definitely be making this again! 🙂
I love pasta and am always trying to come up with new dishes. It’s such an easy meal to get creative with.
I like using whole grained Dijon mustard mainly because I think it adds more flavor, but the smooth variety will just as good. The sun dried tomatoes I have also came in a herbed oil so if you can find those, they add even more flavor to this dish! If you can’t find herbed oil sun dried tomatoes than just add in a tablespoon of italian seasoning or any fresh herbs you have.
I think this would make a great pasta salad too, but I ate it when it was hot. If you decided to go the pasta salad route though, let me know how it turns out. 🙂
