I did manage to get a lot accomplished today though in the midst of my sugar high!
I hit up Homegoods and Target this morning to dig through the Halloween clearance. Do you do that? I do it every year!

I was almost too tired to do anything else but remembered I had made this really delicious pasta last week and wanted to share it with you guys!
My daughter LOVES spinach and artichoke dip. So I wanted to try it out in pasta form and it was super tasty!
I added some spicy seasoned grilled chicken to it, but you don’t have to that if you don’t want to…

I can’t believe I’ve lasted this long without one. Usually I just fire up my outdoor grill but having this as an option has been SO convenient!
It’s perfect for grilling anything from steak to salmon and anything in between!

Here’s how to make this super tasty spinach artichoke chicken pasta…

- Prep Time: 10 minutes
- Cook Time: 20 minutes

Ingredients
SPINACH ARTICHOKE PASTA
- 1 lb. pasta (something hearty like rotini or rigatoni)
- 1 box frozen spinach (thaw and drain all of the moisture out of it)
- 1 16 oz. can artichoke hearts
- 4 oz cream cheese
- 1/2 cup grated parmesan
- 3 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
- salt and pepper to taste
- 2 tablespoons butter
GRILLED CHICKEN
- 2 boneless skinless chicken breasts
- 2 tablespoons blackening seasoning
- olive oil
Instructions
- Cook pasta according to package directions. Reserve 1 cup of pasta water before draining, and set aside.
- Season both sides of chicken breasts and grill until done. Let rest before slicing.
- In a saute pan, melt butter and add in your garlic, spinach and artichoke hearts. Cook for 5 minutes.
- Add in your cream cheese and reserved pasta water. Stir everything together until cream cheese is melted. Season with salt pepper and red pepper flakes.
- Add in your pasta, and parmesan cheese. toss everything together until pasta is coated in sauce. If you need to thin it out, add a splash of milk or cream.
- Top with grilled chicken and enjoy!
