This creamy dijon chicken pasta with sun dried tomatoes and spinach is the perfect meal any night of the week!
The other day when I made the Creamy Dijon Chicken I decided to make it again, but this time in pasta form with some other things I found in my fridge.
The sun dried tomatoes really added a nice sweetness up against the tangy Dijon sauce. I’ll definitely be making this again! 🙂
I love pasta and am always trying to come up with new dishes. It’s such an easy meal to get creative with.

I like using whole grained Dijon mustard mainly because I think it adds more flavor, but the smooth variety will just as good.
The sun dried tomatoes I have also came in a herbed oil so if you can find those, they add even more flavor to this dish! If you can’t find herbed oil sun dried tomatoes than just add in a tablespoon of Italian seasoning or any fresh herbs you have.
I think this would make a great pasta salad too, but I ate it when it was hot. If you decided to go the pasta salad route though, let me know how it turns out. 🙂

Description
This creamy dijon chicken pasta with sun dried tomatoes and spinach is the perfect meal any night of the week!
Ingredients
- 1 lb. boneless skinless chicken tenders (cut into cubes)
- 1 box Rigatoni pasta
- 2 cups fresh spinach
- 2 tablespoons sun dried tomatoes (chopped)
- 2 shallots (chopped)
- 2 cloves garlic (chopped)
- 1/4 cup half and half
- 2 tablespoons Dijon mustard
- 2 tablespoons italian dressing
- salt and pepper to taste
Instructions
- Cook pasta per package instructions.
Heat up a pan on medium high, and add in some olive oil.
- Dice up you chicken and season well with salt and pepper. Add in the pan to brown.
- Chop your shallots and garlic and add them into the pan when chicken is almost cooked through. Cook together for 3 minutes. Careful not to let garlic burn.
- Lower heat to medium low and add in your sun dried tomatoes, spinach, cream, mustard, and dressing. Stir together.
Strain pasta and add into the pan. Toss together and serve.
