Recently, my neighbor and I discovered a little slice of heaven. A fresh seafood market that has pretty much anything you could imagine, and I’m totally hooked. 😀
It’s actually not that easy to find fresh seafood around here surprisingly so I felt like I hit the jackpot when I walked in there for the first time.
We loaded up on clams, crabs, and calamari for the holidays and it was so delicious that I’ve been recreating some of the recipes to have at home.
And one of those recipes is this…
Lemon garlic champagne clams. These little guys are melt in your mouth good and have so much flavor!
I’m a huge fan of one pot meals and clams are one of the easiest one pot meals you can make.
Start out by making a flavorful base of aromatics. Herbs, garlic, citrus…and then toss your clams in. As they cook in the pot, they open their shells and release their juice to create a scrumptious broth that’s perfect for lots of crusty bread dipping!
I love making this dish for an easy meal served with a tomato and mozzarella salad. It’s so simple but satisfying!
Here’s how to make it…

- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
- Yield: 3 people 1x
Ingredients
- 1 lb. little neck clams
- 2 tablespoons ghee or butter (*ghee is just clarified butter)
- 1 cup dry champagne
- 2 tablespoons fresh lemon juice
- 5–6 large cloves fresh garlic chopped
- 1 tablespoon crushed red pepper flakes
- 1 tablespoon fresh parsley
Instructions
- Melt butter in a large pot and add in the garlic and red pepper flakes. Do this on a medium heat while stirring regularly to not burn the garlic. Cook for about 2 minutes, until you really smell the garlic.
- Add in the champagne, and clams. Cover the pot with the lid and let cook for 5-6 minutes. You might hear popping noises as the clams open up.
- Remove the lid and give you clams a good stir. All the shells should be wide open. If they’re not fully open, cover again and cook for another minute or two. If you have any clams that didn’t open at all, remove it and throw it away.
- Once all the clams are wide open, squeeze fresh lemon juice over top. Add the fresh parsley. Give everything a cook stir, and serve right away.
