I normally grill pork but it’s been pretty cold for Florida standards this week and it’s kept me inside. I’m not really complaining though because it’s been a nice change and has allowed me to get a lot accomplished inside.
These pork chops hit the spot after a long day of packing up and putting away all the Christmas decor! I wanted to make something that was super quick and easy with minimal clean up and these pork chops with mushroom and onion gravy did the trick.
Bonus: they were so tasty! 🙂

Here’s how to make it…

- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 3 people 1x
Ingredients
- 3 thick cut bone in pork chops
- 2 Tbsp flour
- 2 tspn olive oil
- 1 box baby Bella mushrooms (quartered)
- 1 bunch scallions (cut diagonally )
- 4 garlic cloves (chopped)
- 1/2 cup low sodium chicken stock
- 2 Tbsp low fat sour cream
- 1 Tbsp fresh chopped parsley
- salt and pepper to taste
Instructions
- Heat a large pan on medium/high. Drizzle olive oil in the pan to heat up.
- Season the pork chops well on both sides with salt and pepper, and give them a light dusting of flour.
- When the oil is hot, add the chops in. Depending on how thick your pork chops are you might need to adjust the cooking time, but 4-5 minutes on each side for a thick chop should do. Chop vegetables while cooking.
- Remove the pork chops from the pan and set aside. Lower the heat to medium and add in your mushrooms, scallions and garlic. Season with salt and pepper and cook for a couple minutes.
- Give the vegetables a light dusting of flour and stir until everything is coated. Then add in your chicken broth and sour cream. Stir until everything is combined and thickened up.
- Pour the mushroom and onion gravy over top of your pork chops and serve! Enjoy!
