Comfort food doesn’t get much better or easier than this! This one pot pork chops and peppers recipe is a hit your whole family will love!

For me, it’s my moms recipes. She didn’t cook too much, but when she did it was always delicious and some of my favorite meals that I still make today.
My mom worked for a newspaper as an accountant, and at some point they made a company cookbook and this recipe was in it. She started making it on the regular in our house and to this day whenever I smell it cooking it makes my mouth water. The boneless pork chops become melt in your mouth good cooked low and slow in the sweet tomato sauce, and it’s so delicious served with a side of mashed potatoes.
My mom was Irish and loved her potatoes. That’s how I grew up eating this and serve it to this day, but I have used rice or butter noodles too and it’s just as tasty. 🙂
My daughter absolutely adores this meal. She even eats the onions and peppers because they become so sweet! I love making this on a chilly fall or winter night too. It’s the perfect meal for sweater weather!

Description
Melt in your mouth boneless pork chops in a sweet tomato sauce with onions and peppers. Comfort food doesn’t get any better than this!
Ingredients
- 6 thin boneless center cut pork chops
- 1/2 jar tomato sauce
- 1 bag frozen assorted bell peppers (*can use fresh if prefer)
- 1 red onion (sliced to match peppers)
- 2 tablespoons agave syrup (*can substitute with sugar if preferred)
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes
- salt and pepper (to taste)
Instructions
- Preheat cast iron pan on high, drizzle in olive oil. Sprinkle both sides of pork chops with salt and pepper and place in the pan to brown.
- When both sides are brown, add in your peppers and onions. Drizzle agave syrup over and let cook for a few minutes. Toss everything together and season with salt, pepper, and red pepper flakes.
- Pour in tomato sauce and lower heat to low. Cover the pan and let everything cook together for 45 minutes.
- Serve with starch of choice. We like it with mashed potatoes. 🙂 Enjoy!
