These coconut fried shrimp with sweet and spicy chili apricot sauce are the perfect game day appetizer or meal!
One of my favorite appetizers to order out is coconut shrimp, so I started making it at home and it’s super easy to do!
I love making a batch of these to put over a salad for a quick dinner idea or serving up a platter of these as a game day finger food.
You really can’t go wrong when you serve these to a crowd. 🙂
I could do without coconut on most things, but for some reason I love it like this. Something about that sweet crunch pairs perfectly with the delicate shrimp.
When I’m making these as a dinner I use jumbo sized, but for an appetizer medium works well since you get more bang for your buck that way.
If you do buy the jumbo sized, get them with the shells still on. Those are great to use to make shrimp stock so you can make chowder which I’m planning to do soon. Yum 🙂
Not into shrimp? You can do this using small pieces of chicken too. I’ve done it both ways and they both are great!
Here’s how to make it…

Ingredients
Coconut Shrimp
- 1 lb Jumbo sized shrimp (16-20) (peeled and deveined)
- 1/4 cup flour
- 1 large egg
- 1 1/2 cup panko breadcrumbs
- 1 cup shredded sweet coconut
- 1–2 cups canola oil
- 1 teaspoon seafood seasoning
- salt and pepper to taste
Dipping Sauce
- 1 cup apricot preserves
- 1/4 cup sweet Thai chili sauce
- 1 tablespoon prepared horseradish
- 1–2 tablespoons Sriracha
Instructions
- Add oil into pan to heat up.
- Set up three shallow dishes 1) flour 2) egg with a splash of water beaten 3) panko and coconut mixed together
- Season your shrimp well with seasoning of choice and dip into flour, then egg, them panko and coconut mixture. Place 4-5 in oil when fully coated.
- Cook for 2 minutes on each side or until golden. (The first batch will come out lighter than the others) Scoop them out onto a paper towel covered plate to absorb extra oil when they’re cooked.
- Mix together sauce and serve. Yum! 🙂
