This chicken in roasted red pepper sauce is a one pan favorite in my house! It’s so easy to whip up and is the perfect week night meal!
Winter break is officially over and my daughter is back in school.
That means back to easy week night dinners for me so I have time to help her with her homework among getting other things done.
An easy meal that I make a lot is this one pan chicken in roasted red pepper sauce.
It goes great with anything you want to pair it with and is so fast to make!
One of my absolute favorite kitchen tools that I don’t talk enough about is my Blendtec blender. I love that thing with a passion!
From sauces to soups, smoothies to homemade nut butters…I use that blender for SO many things. It’s definitely pricey but a great investment!
I’ve been known to throw whatever leftover vegetables I have in there with some chicken broth to make a quick blended soup, and the cool thing is I don’t even have to dirty a pan to cook it since it heats up directly in the blender! 🙂
That’s how I discovered this roasted red pepper sauce. It was a soup I made in the blender one night that I decided to pour over chicken, and oh man, I’m SO glad I did!
I usually serve it with a side of mashed potatoes but it’s so good with anything, and I just ate it on it’s own tonight with some fresh pico di gallo (also made in the blender). It was delicious 🙂
Here’s how to make it…

- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 4 servings 1x
Ingredients
- 4 boneless skinless chicken breasts
- 1 12 oz. Jar of roasted red peppers
- 1 yellow onion (sliced)
- 3 cloves garlic (chopped)
- 1 teaspoon cumin
- 1 teaspoon fresh thyme
- 2 tablespoons olive oil
- 2 tablespoons half and half
- salt and pepper to taste
Instructions
- Heat up your pan on medium high heat and drizzle with olive oil. Throw in your sliced onions to soften a bit. Season with salt and pepper. About 3-4 minutes.
- In your blender add the jar of roasted red peppers (drained first), garlic, the cooked onions, cumin, thyme, and splash of cream. Blend until smooth.
- In the same pan, add in a little more oil. Season chicken on both sides with salt and pepper and put in pan. After about 5 minutes, turn chicken over to other side and pour in the roasted red pepper sauce. Lower the heat to a medium low and let it continue to cook for an additional 10 minutes or so, or until chicken is completely cooked through.
- Serve with side of choice, and enjoy! 🙂
