This sauteed zucchini with feta is one of my favorite side dishes and is great with anything you pair it with! Heck, sometimes I just eat it on it’s own! 🙂

I love zucchini. It’s up there as one of my favorite vegetables with it’s delicate flavor and texture.
I love adding it into whatever I can think of like pastas and soups but sometimes I just like to enjoy it on its own too.

My favorite way to eat it is sauteed with lots of garlic and onions, and then every once in a while I’ll add some cheese on top if I have any.
Feta is one of my favorite cheeses with it’s tangy and salty bite and it tastes great heated up with the tender zucchini.

I grilled up some steak tonight and this was the perfect side dish to go along with it. It kind of made me wish for summer a little bit but I know I’ll be regretting I said that once it’s here. 🙂
Here’s how to make it..

Ingredients
- 5–6 zucchini’s (sliced thin)
- 1 large red onion (sliced thin)
- 3 garlic cloves (chopped)
- 2 tablespoons italian salad dressing
- 1 tablespoon garlic salt
- 1/2 cup crumbled feta cheese
- salt and peper to taste
Instructions
- Slice your zucchini and onion and chop your garlic. Heat up a pan on medium high and drizzle in some oil.
- Add your vegetables and cook for about 7-8 minutes or until the onions begin to soften and the zucchini begins to char up a bit.
- Turn off the heat and add in the seasonings, dressing and feta cheese. Toss together and serve.
