This recipe may not sound too much like a fall dish to you, but to me fall brings two important things…parties and football. Two things that both require easy to make fabulous finger food, and this recipe is just that. Enjoy!
Ingredients-
{makes 4-6 crostinis}
– 4-6 thin slices multi-grain baguette
– 1/2 cup arugula
– 2 tablespoons crumbled feta cheese
– 1 tablespoon of fresh lemon juice
– 1/2 of a garlic clove minced finely
– 1 tablespoon olive oil
– sprinkle of kosher salt and freshly cracked pepper
1. Grill your sliced bread on a grill pan until you have nice marks and bread is crispy on both sides.
2. In a small bowl delicately mix the arugula, crumbled feta cheese, minced garlic, lemon juice, olive oil and salt and pepper together.
**Kitchen tip: Your fingers work well to mix salads like this so you wont bruise the greens.
3. Lay your toasted crostinis onto a platter, top with your salad, and ‘mangia.’
