🍅 Ingredients

  • 6 thin boneless pork chops
  • 2 tbsp olive oil
  • 1 red onion, sliced
  • 1 bag frozen assorted bell peppers (or use fresh sliced peppers)
  • ½ jar tomato sauce
  • 2 tbsp agave syrup (or 2 tbsp sugar)
  • 1 tsp red pepper flakes (optional)
  • Salt & pepper to taste

Instructions

  1. Heat the pan – Warm a large skillet or Dutch oven over medium-high heat and add olive oil.
  2. Brown the pork – Bring out the pork’s flavor with salt and pepper, then sear in the hot pan 2–3 minutes per side until golden.
  3. Add veggies – Add onions and peppers; drizzle on agave. Season with red pepper flakes, salt, and pepper, and toss to combine.
  4. Add tomato sauce – Pour in the tomato sauce and reduce heat to low. Cover and let simmer for 40–45 minutes, stirring occasionally until the pork is tender and the sauce is thick.
  5. Serve and enjoy – Spoon over mashed potatoes, rice, or pasta and enjoy warm.

Description

Melt in your mouth boneless pork chops in a sweet tomato sauce with onions and peppers. Comfort food doesn’t get any better than this!


Ingredients

Scale
  • 6 thin boneless center cut pork chops
  • 1/2 jar tomato sauce
  • 1 bag frozen assorted bell peppers (*can use fresh if prefer)
  • 1 red onion (sliced to match peppers)
  • 2 tablespoons agave syrup (*can substitute with sugar if preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • salt and pepper (to taste)


Instructions

  1. Preheat cast iron pan on high, drizzle in olive oil. Sprinkle both sides of pork chops with salt and pepper and place in the pan to brown.
  2. When both sides are brown, add in your peppers and onions. Drizzle agave syrup over and let cook for a few minutes. Toss everything together and season with salt, pepper, and red pepper flakes.
  3. Pour in tomato sauce and lower heat to low. Cover the pan and let everything cook together for 45 minutes.
  4. Serve with starch of choice. We like it with mashed potatoes. 🙂 Enjoy!
