  • 2 (16 oz) jars mixed pickled vegetables (giardiniera), drained

  • ¾ cup pimiento-stuffed Spanish olives, chopped

  • 2 tablespoons olive oil

  • 2 tablespoons red wine vinegar

For the Sliders

  • 12 small slider rolls or dinner rolls, cut in half

  • 12 thin slices Genoa salami

  • 12 thin slices deli ham

  • 6 slices provolone cheese, cut in half

  • 6 slices Swiss cheese, cut in half

  1. Pulse the mixed pickled vegetables in a food processor 8–10 times until finely chopped.

  2. Stir in chopped olives, olive oil, and red wine vinegar.

  3. Spread about 1 heaping tablespoon of olive salad over the bottom half of each roll.

  4. Layer with salami, ham, provolone, and Swiss cheese.

  5. Add an extra spoonful of olive salad on top.

  6. Place roll tops on and gently press down.
