Description
These Mini Muffulettas are the ultimate Super Bowl party appetizer. Soft slider buns layered with Italian salami, ham, provolone, and a tangy olive salad make the perfect make-ahead game day sandwich.
Ingredients
For the Olive Salad

2 (16 oz) jars mixed pickled vegetables (giardiniera), drained

¾ cup pimiento-stuffed Spanish olives, chopped

2 tablespoons olive oil

2 tablespoons red wine vinegar
For the Sliders

12 small slider rolls or dinner rolls, cut in half

12 thin slices Genoa salami

12 thin slices deli ham

6 slices provolone cheese, cut in half

6 slices Swiss cheese, cut in half

Pulse the mixed pickled vegetables in a food processor 8–10 times until finely chopped.

Stir in chopped olives, olive oil, and red wine vinegar.

Spread about 1 heaping tablespoon of olive salad over the bottom half of each roll.

Layer with salami, ham, provolone, and Swiss cheese.

Add an extra spoonful of olive salad on top.

Place roll tops on and gently press down.

Wrap tightly in plastic wrap and refrigerate at least 2 hours (or overnight) before serving.
