This viral Grillo’s pickle dip is creamy, tangy, and loaded with crunchy dill pickles, herbs, and a buttery toasted crumb topping. It’s the perfect party dip served with potato chips or crackers and takes just minutes to make.
8 oz cream cheese, softened
½ cup mayonnaise
½ cup sour cream
1½ cups finely chopped Grillo’s dill pickles
2 tbsp pickle brine
2 tbsp fresh dill, chopped
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
Topping
½ cup panko breadcrumbs
2 tbsp butter
1 tbsp fresh dill, chopped
For Serving
Crinkle cut potato chips
In a mixing bowl combine the cream cheese and sour cream until smooth and creamy.
Stir in the chopped pickles, pickle brine, fresh dill, garlic powder, onion powder, and black pepper.
Spread the dip into a shallow serving bowl.
In a small skillet melt the butter over medium heat.
Add the panko breadcrumbs and toast until golden brown and crispy, about 2–3 minutes.
Sprinkle the toasted breadcrumbs and fresh dill over the top of the dip.
Serve immediately with crinkle cut potato chips.
For the best flavor, use Grillo’s fresh dill pickles since they have a bright garlicky flavor that makes this dip viral. The dip can also be made ahead and refrigerated for up to 2 days before adding the crunchy topping.
