Tender chicken breasts slow-cooked in a rich, creamy Boursin spinach sauce. This easy crockpot chicken is comforting, flavorful, and perfect served over egg noodles, rice, or mashed potatoes.
2 pounds boneless, skinless chicken breasts
2 teaspoons kosher salt
1½ teaspoons black pepper
½ cup finely chopped shallot
10 ounces frozen chopped spinach, thawed and squeezed dry
½ teaspoon freshly grated nutmeg
½ cup dry white wine or dry vermouth
1½ cups chicken broth
1 cup heavy cream
2 ounces Boursin cheese (Garlic & Fine Herbs)
¼ cup fresh chives, chopped
Place the chicken breasts in the bottom of a 5–7 quart crockpot.
Season the chicken evenly with salt and pepper.
Sprinkle the chopped shallot, spinach, and nutmeg over the chicken.
Pour in the white wine and chicken broth, followed by the heavy cream.
Add the Boursin cheese in small dollops over the top.
Cover and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until the chicken is tender and cooked through.
Stir the sauce gently to fully melt and incorporate the Boursin cheese.
For serving, shred the chicken directly in the crockpot or leave whole.
Sprinkle with fresh chives before serving.
Be sure to squeeze the spinach very dry to prevent a watery sauce.
Chicken thighs can be substituted for breasts for a richer result.
For a thicker sauce, cook uncovered on HIGH for 15–20 minutes at the end.
