Pork Chops

  • 4 bone-in pork chops, about inches thick

  • Salt and freshly cracked black pepper

  • 1 tablespoon olive oil or butter

Herb Stuffing

  • 1½ cups fresh breadcrumbs

  • 2 tablespoons butter, melted

  • 2 tablespoons fresh parsley, finely chopped

  • 1 tablespoon fresh thyme (or 1 teaspoon dried)

  • 1 tablespoon fresh sage, finely chopped (optional)

  • 1 small shallot, finely minced

  • 1 clove garlic, minced

  • ¼ cup chicken broth

Instructions

  • Preheat oven to 375°F.

  • In a bowl, mix breadcrumbs, melted butter, parsley, thyme, sage, shallot, garlic, and chicken broth until evenly moistened.

  • Cut a pocket into the side of each pork chop. Season generously with salt and pepper.

  • Spoon the herb stuffing into each pork chop, pressing gently to fill.

  • Heat olive oil or butter in an oven-safe skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until golden.

  • Transfer skillet to the oven and bake for 20–25 minutes, or until pork reaches an internal temperature of 145°F.

  • Remove from oven and let rest for 5 minutes before serving.

Notes

  • Use thick-cut pork chops for best results.

  • Fresh breadcrumbs give the stuffing a softer, more classic texture.

  • Letting the pork rest keeps it juicy and tender.
