Juicy, golden pork chops stuffed with a savory herb breadcrumb filling and baked to perfection. This cozy, classic dinner is easy enough for weeknights but special enough for Sunday supper.
Pork Chops
4 bone-in pork chops, about 1½ inches thick
Salt and freshly cracked black pepper
1 tablespoon olive oil or butter
Herb Stuffing
1½ cups fresh breadcrumbs
2 tablespoons butter, melted
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh thyme (or 1 teaspoon dried)
1 tablespoon fresh sage, finely chopped (optional)
1 small shallot, finely minced
1 clove garlic, minced
¼ cup chicken broth
Preheat oven to 375°F.
In a bowl, mix breadcrumbs, melted butter, parsley, thyme, sage, shallot, garlic, and chicken broth until evenly moistened.
Cut a pocket into the side of each pork chop. Season generously with salt and pepper.
Spoon the herb stuffing into each pork chop, pressing gently to fill.
Heat olive oil or butter in an oven-safe skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until golden.
Transfer skillet to the oven and bake for 20–25 minutes, or until pork reaches an internal temperature of 145°F.
Remove from oven and let rest for 5 minutes before serving.
Use thick-cut pork chops for best results.
Fresh breadcrumbs give the stuffing a softer, more classic texture.
