Description
These quick pickled red onions are bright, tangy, and incredibly easy to make with just a few simple ingredients. Ready in about 30 minutes, they add the perfect pop of flavor to tacos, burgers, sandwiches, salads, and grain bowls.
Ingredients
1 large red onion, thinly sliced
½ cup apple cider vinegar (or white vinegar)
½ cup water
1 tablespoon sugar
1 teaspoon salt
½ teaspoon black peppercorns (optional)
Instructions

Thinly slice the red onion into rings or half-moons and place them in a clean glass jar.

In a small saucepan, combine the vinegar, water, sugar, salt, and peppercorns.

Heat the mixture over medium heat just until the sugar and salt dissolve.

Carefully pour the warm pickling liquid over the onions in the jar.

Let the onions sit at room temperature for about 20–30 minutes until they soften and turn bright pink.

Seal the jar and store in the refrigerator. The flavor improves after a few hours and they will keep for up to 2 weeks.
Notes
Use a mandoline slicer to get extra thin onion slices for the best texture. Quick pickled onions are delicious on tacos, burgers, sandwiches, avocado toast, salads, and rice bowls.
