Pickled onions are an easy and delicious way to use up onions in your pantry before they begin to turn. Use them as a condiment, salad topper, or anything needing a fresh, tangy bite. They’ll quickly become one of your favorite things to have on hand!

Spring is here and I’ve been having a blast digging in the dirt and getting my garden ready to plant some new things. I’ve been learning more and more about growing food, and have really become passionate about it over the past year. A lot of it is trial and error, and I’ve been using my small raised garden bed as my little spot for experimenting.

Last year was the first year I tried growing things from seeds, and to my surprise had a lot of success! I used to go to the local big box store and grab plants already established and fruiting, but there’s something really exciting and motivating about starting from a seed.

This year I’m trying my hand at growing my own garlic and onions. They’re planted and I can hardly wait to see how they do!

I think about the jars and jars of pickled onions I’ll have stocked in my fridge and it makes my mouth water. I use these on almost everything I can.

Pickled onions are so easy to make. They keep for quite a while too, but I usually go through them so fast that doesn’t even matter. Grilling season is just around the corner and if you’re a fan of hotdogs and brats than these pickled onions need to be front and center on your table!

Pickled Onions


  • Prep Time: 15 minutes
  • Total Time: 16 minutes
  • Yield: 1 jar 1x

Ingredients

Scale
  • 12 medium- large red onions (thinly sliced)
  • 1/2 cup white vinegar
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 1 tablespoon Kosher salt
  • 1 1/2 teaspoons dried dill

Instructions

  1. Slice onions and add them into a mason jar.
  2. Mix together the rest of the ingredients into a a bowl pour into the jar. If you need more liquid to cover the onions, add more vinegar to top it off. Make sure all the onions are submerged in liquid.
  3. Let them pickle for 24 hours and then use them on top of anything you like! Enjoy 🙂
