Perfect Summer Potato Salad

Whether its a backyard BBQ or a church pot luck, this summer potato salad is the perfect side dish to bring!


  • 1 lb red potatoes
  • 5 hard boiled eggs (chopped)
  • 1/4 cup carrots (shredded)
  • 1/2 cup celery (chopped)
  • 1/4 cup red onion (chopped)
  • 1/2 cup sweet baby peas (thawed from frozen)
  • 3/4 cup mayo
  • 3 tablespoons Dijon Mustard
  • 3 tablespoons sweet relish
  • salt and pepper (to taste)


  1. Cut and cook your potatoes in salted boiling water until fork tender. Then drain and set aside to cool.
  2. Chop up the rest of your potato salad ingredients and add into a large bowl with the mayo, mustard, and relish. Give everything a good mix until completely combined.
  3. Cover and refrigerate until time to serve.
