Easy Lasagna Soup with Herbed Ricotta

Description

This hearty Lasagna Soup with Herbed Ricotta is loaded with Italian sausage, tender egg noodles, rich tomato broth, and topped with creamy herbed ricotta and shaved parmesan. A cozy one-pot comfort food dinner perfect for fall and winter nights.


Ingredients

  • 1 lb Italian sausage (mild or hot)

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 (28 oz) can crushed tomatoes

  • 1 (28 oz) can diced tomatoes

  • 4 cups low-sodium chicken broth

  • 2 cups water

  • 2 bay leaves

  • ½ tsp red pepper flakes

  • 1 tsp dried oregano

  • Salt and black pepper to taste

  • 8 oz wide egg noodles or broken lasagna noodles

  • 2 cups fresh spinach or kale (optional)

For the Herbed Ricotta

  • 1 cup ricotta cheese

  • 2 tbsp fresh basil, chopped

  • 2 tbsp fresh parsley, chopped

  • ¼ cup freshly grated or shaved parmesan

  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.

  2. Add diced onion and cook until softened, about 3–4 minutes. Stir in garlic and cook 30 seconds.

  3. Stir in tomato paste and cook for 1 minute to deepen flavor.

  4. Add crushed tomatoes, diced tomatoes, chicken broth, water, bay leaves, oregano, red pepper flakes, salt, and pepper. Bring to a simmer and cook 15–20 minutes.

  5. Meanwhile, cook noodles separately until al dente. Drain and set aside.

  6. Stir spinach or kale into the soup if using and cook until wilted.

  7. To make the herbed ricotta, mix ricotta, basil, parsley, parmesan, salt, and pepper in a small bowl.

  8. Add cooked noodles to the soup just before serving.

  9. Ladle into bowls and top with a generous dollop of herbed ricotta and extra parmesan.

Notes

  • Cooking noodles separately prevents them from getting mushy.

  • Store leftovers without noodles mixed in for best texture.

  • Freezes well without pasta added.
