Soft, bakery-style Greek spinach-cheese rolls filled with feta, spinach, herbs, and melty cheese. An easy savory bread recipe perfect for brunch, holidays, or entertaining.

  • 1 package (1 pound) frozen bread dough, thawed according to package directions

  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed completely dry

  • ¾ cup crumbled feta cheese

  • ½ cup shredded Monterey Jack cheese

  • 4 green onions, thinly sliced

  • 1 teaspoon dried dill weed

  • ½ teaspoon garlic powder

  • ½ teaspoon black pepper

  • Nonstick cooking spray

Instructions

  1. Spray 15 standard (2½-inch) muffin cups with nonstick cooking spray; set aside.

  2. On a lightly floured surface, roll the thawed bread dough into a 15×9-inch rectangle.

  3. In a large bowl, combine spinach, feta, Monterey Jack, green onions, dill, garlic powder, and black pepper; mix well.

  4. Spread the spinach mixture evenly over the dough, leaving a 1-inch border along the long edges.

  5. Starting from a long side, roll the dough up tightly jelly-roll style; pinch the seam to seal.

  6. Place seam-side down and cut crosswise into 15 equal slices using a serrated knife.

  7. Place slices cut-side up into prepared muffin cups.

  8. Cover loosely and let rise in a warm place for 30 minutes, or until slightly puffy.

  9. Preheat oven to 375°F.

  10. Bake for 20–25 minutes, or until golden brown.

  11. Serve warm or at room temperature.

Notes

  • Be sure to squeeze as much moisture as possible from the spinach to prevent soggy rolls.

  • These rolls can be assembled ahead of time and baked just before serving.

  • Leftovers reheat well in a low oven.
