Soft, bakery-style Greek spinach-cheese rolls filled with feta, spinach, herbs, and melty cheese. An easy savory bread recipe perfect for brunch, holidays, or entertaining.
Ingredients

1 package (1 pound) frozen bread dough, thawed according to package directions

1 package (10 ounces) frozen chopped spinach, thawed and squeezed completely dry

¾ cup crumbled feta cheese

½ cup shredded Monterey Jack cheese

4 green onions, thinly sliced

1 teaspoon dried dill weed

½ teaspoon garlic powder

½ teaspoon black pepper

Nonstick cooking spray
Instructions

Spray 15 standard (2½-inch) muffin cups with nonstick cooking spray; set aside.

On a lightly floured surface, roll the thawed bread dough into a 15×9-inch rectangle.

In a large bowl, combine spinach, feta, Monterey Jack, green onions, dill, garlic powder, and black pepper; mix well.

Spread the spinach mixture evenly over the dough, leaving a 1-inch border along the long edges.

Starting from a long side, roll the dough up tightly jelly-roll style; pinch the seam to seal.

Place seam-side down and cut crosswise into 15 equal slices using a serrated knife.

Place slices cut-side up into prepared muffin cups.

Cover loosely and let rise in a warm place for 30 minutes, or until slightly puffy.

Preheat oven to 375°F.

Bake for 20–25 minutes, or until golden brown.

Serve warm or at room temperature.

Be sure to squeeze as much moisture as possible from the spinach to prevent soggy rolls.
