Juicy pork chops seared until golden and simmered in a rich garlic parmesan cream sauce with crispy bacon and fresh rosemary. This easy one-skillet dinner is cozy, comforting, and perfect for weeknights or entertaining.
4 bone-in pork chops (about 8 ounces each)
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
6 slices thick-cut bacon, chopped
1 small yellow onion, thinly sliced
4 cloves garlic, minced
1½ teaspoons fresh rosemary, chopped
½ cup dry white wine
1½ cups heavy cream
2 tablespoons Dijon mustard
½ cup shredded Parmesan cheese
Season pork chops with 1½ teaspoons salt and ½ teaspoon pepper. Let rest at room temperature for 15 minutes.
In a large cast iron skillet over medium-high heat, cook bacon until crisp. Remove bacon and reserve 2 tablespoons of drippings in the pan.
Sear pork chops in the skillet, cooking about 3 minutes per side until browned. Remove and set aside.
Add onion to the skillet and cook until softened, about 5 minutes. Stir in garlic and rosemary and cook until fragrant, about 1 minute.
Pour in white wine and simmer until reduced by half. Stir in cream, Dijon mustard, remaining salt and pepper, and bring to a gentle simmer.
Whisk in Parmesan cheese until smooth and slightly thickened.
Return pork chops to the skillet and simmer until cooked through and the sauce thickens, about 10 minutes.
Stir bacon back into the sauce and serve immediately.
Bone-in pork chops stay juicier than boneless.
If sauce thickens too much, add a splash of cream or broth.
Serve with mashed potatoes, green beans, or crusty bread to soak up the sauce.
