Ingredients

  • 2 cups cooked and cooled white rice (day-old preferred)
  • 1 ½ cups cooked chicken, diced (rotisserie works great)
  • 2 large eggs
  • 1 cup frozen peas and carrots
  • 2–3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons butter or neutral oil
  • 2 green onions, sliced
  • Salt and black pepper to taste

Why Day-Old Rice Is Important

Cold rice keeps the texture light and slightly crisp instead of mushy. If using fresh rice, spread it on a baking sheet and refrigerate for 30–60 minutes before cooking.


How to Make Chicken Fried Rice

Step 1: Scramble the Eggs

Heat 1 tablespoon oil in a large skillet over medium heat. Scramble eggs until just set. Remove and set aside.

Step 2: Cook the Chicken

Add remaining oil. If using freshly cooked chicken, sauté until fully cooked. If using leftover chicken, simply heat through.

Step 3: Add Vegetables

Stir in peas and carrots and cook until tender.

Step 4: Add Rice

Add cold rice and break up clumps. Stir fry for 3–4 minutes, allowing some grains to crisp.

Step 5: Add Sauce & Finish

Pour in soy sauce and sesame oil. Stir well. Add scrambled eggs back in and toss to combine.

Top with green onions and serve immediately.
