Crockpot Chicken Tortilla Soup- A super simple, satisfying, and delicious meal that will be your new family favorite!
Fall and winter is my absolute favorite time of year. I love the clothing that’s in stores, the fact that I can actually do my hair and it will stay that way all day, and I love making cool weather meals! Soups and stews are always my go-to dinners, especially if I can use my crockpot! That’s why I love this super simple “dump it all in the pot and turn it on” soup!
Literally five minutes of prep, and a few hours later dinner is served…It doesn’t get easier than that! 🙂
Here’s what you’ll need…{serves about 8}
- 3-4 raw boneless skinless chicken breasts
- 1 yellow onion- chopped
- 4 cloves garlic- chopped
- 1 10 oz. can diced tomatoes with chiles
- 1 qt. low sodium chicken stock (yes- you can make your own, but we’re keeping it easy here)
- 1 10 oz. can enchilada sauce (yes- you can make your own, but we’re keeping it easy here)
- 1 8 oz can of tomato sauce
- 1 5 oz. can green chiles
- 1 bag frozen corn
- 1 can black beans (drained and rinsed)
- 1/2- 1 cup chopped fresh cilantro
- about 1 teaspoon chili powder
- about 1 teaspoon cumin
- about a teaspoon Texas Pete Hot Sauce
- 2 bay leaves
- salt and pepper to taste
**Top with chopped scallions, sour cream, cheddar cheese, fresh cilantro, more hot sauce- {find Texas Pete Hot Sauce} and tortilla chips.
Easiest instructions ever…Ready? 🙂
- Dump everything into your crockpot
- Give it a stir
- Put on lid
- Set crockpot to cook on low 6-8 hours
I really love using the Texas Pete Hot Sauce as my secret ingredient to bring another layer of heat to the dish that the chili powder just doesn’t do. Depending on how hot you like your soup you can always add more or less, but it gives such a great flavor to the soup so I don’t recommend ommiting it. Plus there’s so many other Texas Pete Hot Sauce recipes you can use it for so it’s a great staple to keep in your pantry!
Once the chicken is cooked remove it from the crockpot and shred it with two forks before adding it back into the soup and serving.
Top with your favorite toppings, and a few more splashes of Texas Pete Hot Sauce, like I do.
Super easy and oh so delicious! Seriously, the most perfect meal on a chilly night! 🙂

I love fall and winter too, especially because it is during that time were thanksgiving and Christmas take place. And this hearty recipe is just so perfect for this season. Spoonful Of Comfort
