Description

Fresh rice paper spring rolls filled with turkey, crispy bacon, lettuce, and tomato for a light twist on the classic club sandwich. Perfect for lunch, appetizers, or a healthy no-cook meal.


Ingredients

10 rice paper wrappers

1½ cups cooked turkey breast, chopped (or rotisserie chicken)

6 slices bacon, cooked crispy and chopped

1½ cups shredded lettuce (romaine or iceberg)

1 large tomato, diced and seeds removed

¼ cup mayonnaise

1 teaspoon Dijon mustard

½ teaspoon black pepper

¼ teaspoon salt

Optional:

  • sliced avocado

  • shredded cheddar or Swiss cheese

  • sliced cucumber

For dipping:

  • ranch dressing

  • honey mustard

  • garlic aioli


Instructions

1. Prepare the filling

In a mixing bowl combine the chopped turkey, crispy bacon, shredded lettuce, and diced tomato.

In a small bowl stir together the mayonnaise and Dijon mustard. Add to the filling and toss gently to coat. Season with salt and pepper.


2. Soften the rice paper

Fill a shallow dish with warm water.

Dip one rice paper wrapper into the water for about 10–15 seconds until softened but still slightly firm.

Lay the wrapper flat on a clean cutting board or work surface.


3. Fill and roll

Place about ¼ cup of filling across the lower third of the wrapper.

Fold the bottom over the filling, fold in the sides, then roll tightly like a burrito.

Repeat with the remaining wrappers and filling.


4. Serve

Serve the spring rolls whole or sliced in half with ranch dressing, honey mustard, or garlic aioli for dipping.

Notes

Do not oversoak the rice paper wrappers or they may tear. They will continue softening after you remove them from the water.

Pat ingredients dry before assembling to prevent soggy wrappers.

These spring rolls are best enjoyed fresh the day they are made.
