These homemade Buffalo Chicken Rollers are inspired by the spicy convenience store snack from 7-Eleven. Made with ground chicken, buffalo sauce, garlic, and simple spices, they bake on a sheet pan until juicy and lightly caramelized. Perfect for game day, snacks, or an easy weeknight dinner.
1 lb ground chicken
¼ cup buffalo sauce
3 cloves garlic, minced
½ cup finely diced onion
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
½ tsp cayenne pepper (optional)
1 tbsp olive oil (for brushing)
Ranch dressing
Blue cheese dressing
Celery sticks
Carrot sticks
Preheat oven to 425°F and line a baking sheet with parchment paper.
In a large bowl combine:
ground chicken
buffalo sauce
minced garlic
diced onion
paprika
garlic powder
onion powder
salt
black pepper
cayenne pepper
Mix until evenly combined.
Divide the mixture and shape into long roller-style logs similar to convenience store buffalo chicken rollers.
Place them on the prepared baking sheet.
Lightly brush the rollers with olive oil to help them brown and caramelize.
Bake for 18–20 minutes, until cooked through and slightly browned.
For extra color, broil for 2–3 minutes at the end.
These buffalo chicken rollers are perfect served with ranch or blue cheese dressing for dipping.
They also work great:
in wraps
sliced into salads
served with celery and carrot sticks
Leftovers keep in the refrigerator for up to 3 days.
If the mixture feels soft, chill it for 15–20 minutes before shaping.
Brush with extra buffalo sauce during the last few minutes of baking for more flavor.
Serve with ranch or blue cheese dressing.
