    1. Prep Oven & Mix
      Preheat oven to 350°F. In a large bowl, combine all ingredients except the extra wing sauce.



    2. Form Chicken Balls
      With damp hands, roll mixture into ~12 bite-sized balls and place on a baking sheet.



    3. Bake
      Bake 30 minutes until fully cooked and golden on the outside.



    4. Sauce & Serve
      Toss the hot bites in additional Buffalo sauce and serve with celery sticks and blue cheese dressing.

Ingredients

Scale
  • 1 lb. ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup shredded carrots
  • 1/4 cup chopped onion
  • 3 chopped garlic cloves
  • 1 cup favorite wing sauce
  • 1/4 cup crumbled blue cheese
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 350 and mix together all of your ingredients. I put about 2 tablespoons of the wing sauce into the meat mixture and reserve the rest to toss them after they’re cooked.
  2. With clean and damp hands, roll the mixture into balls and place them on a baking sheet. 1 lb makes about 12 balls.
  3. Cook for 30 minutes and toss the meatballs in the remaining wing sauce when they’re done and serve immediately with celery sticks and blue cheese dressing to dip.
  4. *Bonus! The celery acts as a skewer to pick those delicious chicken ball bites up. 🙂 Enjoy!
