Description

This bacon cheeseburger soup is rich, creamy, and packed with classic cheeseburger flavor. Made with ground beef, crispy bacon, tender potatoes, and cheddar cheese, it’s an easy one-pot comfort food dinner perfect for cozy nights.


Ingredients

  • 1 pound ground beef

  • 5 slices thick-cut bacon, diced

  • 1 yellow onion, diced

  • 5 medium Yukon gold potatoes, peeled and diced

  • 1 (14.5-ounce) can diced tomatoes

  • 32 ounces beef broth

  • 3 tablespoons burger seasoning

  • 2 tablespoons yellow mustard

  • 2 tablespoons sweet relish

  • 1/4 cup ketchup

  • 1/4 cup half-and-half

  • 8 ounces shredded cheddar cheese

  • Salt and black pepper, to taste


Instructions

  • In a large pot or Dutch oven over medium heat, cook the diced bacon until crisp. Remove and set aside, leaving the grease in the pot.

  • Add the ground beef and cook until browned, breaking it into small pieces. Drain excess grease if needed.

  • Add the diced onion and cook until softened. Stir in the diced potatoes.

  • Add the diced tomatoes, beef broth, burger seasoning, mustard, relish, and ketchup. Stir well and bring to a simmer.

  • Cover and cook for 30 minutes, or until the potatoes are fork-tender.

  • Reduce heat to low. Stir in the half-and-half, then add the shredded cheddar cheese a little at a time until melted and smooth.

  • Season with salt and black pepper to taste.

  • Serve hot, topped with crispy bacon.

Notes

  • Use freshly shredded cheese for the smoothest texture.

  • Add cheese over low heat to prevent curdling.

  • If the soup thickens too much, add a splash of broth or milk before serving.
