These oven baked Western BBQ Cowboy Tacos are loaded with smoky ground beef, crispy bacon, melty cheddar cheese, creamy coleslaw, green onions, and tangy barbecue sauce tucked into crispy baked tortillas. The ultimate easy taco night dinner packed with bold cowboy burger flavor.


Ingredients

  • 1 ½ pounds ground beef
  • 8 slices bacon, cooked and crumbled
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced
  • ¾ cup barbecue sauce, plus more for drizzling
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1012 small flour tortillas
  • 1 tablespoon olive oil or melted butter

Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • Salt to taste

Toppings

  • 2 cups coleslaw mix
  • 23 green onions, sliced
  • Crispy fried onions (optional)
  • Pickle slices (optional)
  • Burger sauce or ranch dressing (optional)


Instructions

  1. Preheat oven to 400°F and lightly grease a baking dish or sheet pan.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease if needed.
  3. Stir in garlic, smoked paprika, garlic powder, onion powder, black pepper, salt, barbecue sauce, and half the bacon crumbles. Simmer for 2–3 minutes.
  4. Warm tortillas slightly so they fold easily without cracking.
  5. Fill tortillas with the BBQ beef mixture and shredded cheeses. Fold and arrange seam-side down in the prepared baking dish.
  6. Brush taco shells lightly with olive oil or melted butter.
  7. Bake for 15–18 minutes, or until tacos are crispy and cheese is melted.
  8. Top tacos with coleslaw mix, remaining bacon, sliced green onions, and a drizzle of barbecue sauce before serving.
