Chicken Filling

  • 1 tablespoon butter or avocado oil
  • 1 pound lean ground chicken
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, finely diced
  • 1 cup shredded carrots
  • 1 (8-ounce) can water chestnuts, drained and diced
  • 3 green onions, sliced

Thai Sauce

  • ¼ cup low-sodium soy sauce
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon fresh lime juice

For Serving

  • 1 head butter lettuce (or Bibb lettuce), leaves separated
  • ¼ cup chopped roasted peanuts
  • 2 tablespoons chopped fresh cilantro
  • Sesame seeds
  • Lime wedges

Instructions

  1. Heat the butter or oil in a large skillet over medium-high heat.
  2. Add the onion and cook for 3–4 minutes until softened.
  3. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
  4. Add the ground chicken and cook, breaking it apart with a wooden spoon, until fully browned.
  5. Stir in the diced bell pepper, shredded carrots, water chestnuts, and green onions. Cook for 3–4 minutes until slightly tender.
  6. In a small bowl, whisk together the soy sauce, sweet chili sauce, hoisin sauce, rice vinegar, sesame oil, sriracha, and lime juice.
  7. Pour the sauce over the chicken mixture and stir well.
  8. Simmer for 3–5 minutes until the sauce slightly thickens and coats the chicken.
  9. Spoon the filling into crisp butter lettuce leaves.
  10. Garnish with chopped peanuts, cilantro, sesame seeds, and a squeeze of fresh lime before serving.
