Description
This spicy ranch corn salsa is creamy, fresh, sweet, and just the right amount of spicy. Made with sweet corn, jalapeños, green onions, cilantro, lime juice, and spicy ranch dressing, it’s the perfect easy summer appetizer for BBQs, taco nights, cookouts, and parties.

- 4 ears fresh sweet yellow corn, kernels removed
- 1 jalapeño, seeded and finely diced
- 1 (4-ounce) can diced green chiles
- 1 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 1/2 cup spicy ranch dressing
- Salt and black pepper, to taste
Instructions
- Slice the fresh corn kernels off the cob and place them into a large mixing bowl.
- Add the diced jalapeño, green chiles, green onions, cilantro, lime juice, and spicy ranch dressing.
- Stir everything together until well combined and creamy.
- Season with salt and black pepper to taste.
- Cover and refrigerate for at least 1–2 hours before serving for the best flavor.
- Serve chilled with tortilla chips or as a topping for tacos, grilled chicken, burgers, or burrito bowls.
Notes
- Fresh sweet corn gives the best flavor and crunch.
- Remove the jalapeño seeds for a milder salsa.
- Add extra jalapeños or hot sauce if you like it spicier.
- This salsa tastes even better after chilling.
