These Swedish Meatball Mashed Potato Bowls are cozy comfort food made easy. Creamy mashed potatoes are topped with savory ground beef Swedish-style gravy with green beans and finished with a spoonful of sweet lingonberry jam for the perfect sweet and savory dinner.
Ingredients
Mashed Potatoes
2 lbs potatoes, peeled and cubed
4 tbsp butter
½ cup milk or cream
½ tsp salt
½ tsp black pepper
Swedish Beef Gravy
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 ½ cups frozen green beans
3 tbsp butter
3 tbsp flour
2 cups beef broth
½ cup sour cream
1 tsp Worcestershire sauce
1 tsp Dijon mustard
½ tsp paprika
¼ tsp nutmeg
¼ tsp allspice
salt and pepper to taste
For the Bowls
prepared mashed potatoes

lingonberry jam
fresh parsley or chives
Instructions

Cook the potatoes
Boil peeled cubed potatoes in salted water for about 15 minutes until fork tender. -
Mash the potatoes
Drain and mash with butter, milk, salt, and pepper until smooth and creamy. Set aside. -
Brown the beef
In a large skillet over medium heat cook the ground beef and diced onion until browned. Add garlic and cook for another minute. -
Add the green beans
Stir the frozen green beans into the beef mixture and cook for 3–4 minutes until heated through. -
Make the gravy
Push the beef mixture to the side of the skillet. Melt butter and whisk in flour. Cook for 1 minute to form a roux. -
Add the broth and seasonings
Slowly whisk in beef broth. Add Worcestershire sauce, Dijon mustard, paprika, nutmeg, allspice, salt, and pepper. Simmer until thick. -
Make it creamy
Remove from heat and stir in sour cream until the gravy is smooth and creamy. -
Assemble the bowls
Spoon mashed potatoes into bowls. Top with the Swedish beef gravy and green beans. -
Finish the dish
Add a spoonful of lingonberry jam on top and garnish with parsley.
