These spooky turkey meatball sandwiches are the perfect easy Halloween dinner idea! Juicy turkey meatballs are simmered in marinara sauce and topped with mozzarella and olive “eyeballs” for a festive, kid-friendly Halloween meal before trick-or-treating.
1 lb ground turkey
½ cup breadcrumbs
1 large egg
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
1 jar (24 oz) marinara sauce
1–2 cups shredded mozzarella cheese
6 hoagie rolls or sub buns
Sliced black olives (for eyeballs)
Small mozzarella balls or thick mozzarella slices
Plastic spiders for garnish (non-edible)
Preheat oven to 375°F. Line a baking sheet with parchment paper.
In a large bowl, mix ground turkey, breadcrumbs, egg, basil, oregano, garlic powder, salt, and pepper until combined.
Form mixture into 12 meatballs and place on prepared baking sheet. Bake 15–18 minutes until cooked through.
While meatballs bake, warm marinara sauce in a saucepan over medium heat.
Add cooked meatballs to the sauce and simmer for 5–10 minutes.
Slice hoagie rolls and place 2 meatballs inside each roll. Spoon extra sauce over top.
Sprinkle with mozzarella and broil 1–2 minutes until melted and bubbly.
For Halloween flair, top with mozzarella slices and black olive “eyeballs.”

Meatballs can be made ahead and stored in the fridge for up to 2 days.
