This spinach salad with poppyseed dressing is a fresh, sweet, and crunchy classic made with strawberries, pecans, bacon, and feta, tossed in a creamy homemade dressing. Perfect for spring, Easter, or an easy everyday side dish.

For the Salad

  • 6 cups baby spinach, washed and dried

  • ½ cup strawberries, sliced

  • ½ cup red onion, thinly sliced

  • ⅓ cup cooked bacon, crumbled

  • ¼ cup feta cheese, crumbled

  • ½ cup pecans (toasted if desired)

For the Poppyseed Dressing

  • ½ cup mayonnaise

  • 2 tablespoons milk

  • 2 tablespoons apple cider vinegar

  • 3 tablespoons sugar

  • 1 tablespoon poppy seeds

  • ¼ teaspoon salt

Instructions

  • Make the dressing:
    In a small bowl, whisk together mayonnaise, milk, apple cider vinegar, sugar, poppy seeds, and salt until smooth and creamy. Refrigerate until ready to use.

  • Prepare the salad:
    In a large bowl, add baby spinach, sliced strawberries, red onion, bacon, feta cheese, and pecans.

  • Toss and serve:
    Drizzle the poppyseed dressing over the salad just before serving. Toss gently until evenly coated. Serve immediately.
