Creamy slow cooker cheddar pasta with cocktail weenies is a nostalgic comfort food recipe made with rotini, cheddar cheese soup, butter, and lots of melted cheddar cheese.

Ingredients

1 package (16 oz) rotini pasta
2 cups half-and-half
1 can (10¾ oz) condensed cheddar cheese soup, undiluted
½ cup butter, melted
4 cups shredded cheddar cheese
1 package (1214 oz) cocktail weenies (Little Smokies)

Optional
chopped parsley for garnish

Instructions

  • Cook the rotini pasta according to the package directions. Drain well.

  • In a 5-quart slow cooker, combine the half-and-half, condensed cheddar cheese soup, and melted butter. Stir until smooth.

  • Add the cooked pasta and cocktail weenies.

  • Stir in the shredded cheddar cheese until everything is coated in the sauce.

  • Cover and cook on LOW for 2 to 2½ hours, until the cheese is fully melted and the pasta is creamy.

  • Stir before serving and garnish with chopped parsley if desired.

Notes

If the pasta thickens too much, stir in ¼ cup milk to loosen the sauce.
• Sharp cheddar gives the best flavor.
• You can substitute cubed ham or sliced smoked sausage for the cocktail weenies.
