Creamy slow cooker cheddar pasta with cocktail weenies is a nostalgic comfort food recipe made with rotini, cheddar cheese soup, butter, and lots of melted cheddar cheese.
1 package (16 oz) rotini pasta
2 cups half-and-half
1 can (10¾ oz) condensed cheddar cheese soup, undiluted
½ cup butter, melted
4 cups shredded cheddar cheese
1 package (12–14 oz) cocktail weenies (Little Smokies)
Optional
chopped parsley for garnish
Cook the rotini pasta according to the package directions. Drain well.
In a 5-quart slow cooker, combine the half-and-half, condensed cheddar cheese soup, and melted butter. Stir until smooth.
Add the cooked pasta and cocktail weenies.
Stir in the shredded cheddar cheese until everything is coated in the sauce.
Cover and cook on LOW for 2 to 2½ hours, until the cheese is fully melted and the pasta is creamy.
Stir before serving and garnish with chopped parsley if desired.
If the pasta thickens too much, stir in ¼ cup milk to loosen the sauce.
• Sharp cheddar gives the best flavor.
• You can substitute cubed ham or sliced smoked sausage for the cocktail weenies.
