2 large eggs
1 teaspoon vanilla extract
1/2 cup unsalted butter, melted
1 box powdered sugar (about 3 ¾ cups)
Instructions
-
Preheat oven to 350°F.
-
Line a rimmed sheet pan (10×15 or similar) with parchment paper or lightly grease it.
-
Arrange the Chessmen cookies in a single layer across the bottom of the sheet pan.
-
In a large mixing bowl beat the cream cheese, eggs, and vanilla until smooth.
-
Add the melted butter and mix until combined.
-
Slowly mix in the powdered sugar until the filling is smooth and creamy.

Pour the filling evenly over the cookie layer.
-
Bake for 35–40 minutes, until the center is just set.

Allow the dessert to cool completely before slicing into bars.
-
Dust with powdered sugar before serving if desired.
