Description

These rich and buttery Sheet Pan Chessman Pie Bars are a classic Southern dessert made with Pepperidge Farm Chessmen cookies and a creamy custard filling. Easy to make and perfect for potlucks, holidays, and feeding a crowd.


Ingredients

2 packages Pepperidge Farm Chessmen cookies
8 oz cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsalted butter, melted
1 box powdered sugar (about 3 ¾ cups)


Instructions

  • Preheat oven to 350°F.

  • Line a rimmed sheet pan (10×15 or similar) with parchment paper or lightly grease it.

  • Arrange the Chessmen cookies in a single layer across the bottom of the sheet pan.

  • In a large mixing bowl beat the cream cheese, eggs, and vanilla until smooth.

  • Add the melted butter and mix until combined.

  • Slowly mix in the powdered sugar until the filling is smooth and creamy.

  • Pour the filling evenly over the cookie layer.

  • Bake for 35–40 minutes, until the center is just set.

  • Allow the dessert to cool completely before slicing into bars.

  • Dust with powdered sugar before serving if desired.

Notes

  • Do not overbake. The center should still be slightly soft when removed from the oven.

  • Allow the bars to cool completely so they set properly before cutting.

  • These bars taste even better the next day after chilling in the refrigerator.
