Creamy savory oats topped with sautéed spinach and a runny fried egg for a healthy, protein-rich breakfast that’s filling, comforting, and easy to make. A perfect alternative to sweet oatmeal.
1 packet plain instant oatmeal (or ½ cup rolled oats)
1 cup water or low-sodium broth
1 teaspoon butter
1 tablespoon shredded cheddar cheese
1 tablespoon chopped scallions
1 tablespoon fresh herbs (chives, basil, or tarragon)
1 cup fresh spinach
1 large egg
Salt and black pepper, to taste
Red pepper flakes, optional
Toast, for serving (optional)
Cook oatmeal according to package directions using water or broth.
Stir butter, shredded cheese, scallions, herbs, salt, and pepper into the hot oats until creamy.
In a small skillet, sauté spinach until just wilted. Set aside.
In the same skillet, fry the egg to desired doneness (runny yolk recommended).
Spoon oats into a bowl, top with spinach, then place the egg on top.
Finish with red pepper flakes and serve with toast if desired.
Use broth instead of water for extra savory flavor.
Add mushrooms or roasted vegetables for more texture.
For dairy-free, skip cheese or use nutritional yeast.
