Ingredients

Scale
  • 1 pound Italian sausage links
  • 2 tablespoons olive oil
  • 1 large sweet onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Brown the Italian sausage on all sides, about 8–10 minutes. Remove from skillet and slice into bite-sized pieces.
  • Add sliced onions and bell peppers to the skillet. Cook for 5–7 minutes until softened.
  • Stir in the garlic and cook for 30 seconds.
  • Add crushed tomatoes, tomato sauce, Italian seasoning, oregano, salt, pepper, and crushed red pepper flakes.
  • Stir well and return the sausage to the skillet.
  • Reduce heat to medium-low and simmer for 15–20 minutes until the sauce thickens and the sausage is cooked through.
  • Garnish with fresh basil or parsley before serving.

Notes

  • Use sweet, mild, or hot Italian sausage depending on your preference.
  • For extra flavor, allow the onions to caramelize slightly before adding the sauce.
  • Great served over pasta, mashed potatoes, rice, or on toasted hoagie rolls.
  • Leftovers store well for up to 4 days in the refrigerator.
