Juicy, tender rotisserie-style whole chicken made right in your crockpot with simple pantry spices and butter. This easy slow cooker recipe is perfect for weeknight dinners and meal prep.


Ingredients

  • 1 whole chicken (45 lbs)

  • 1 tablespoon paprika

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika (optional)

  • 1 tablespoon olive oil or melted butter

  • 23 tablespoons butter (cut into small pieces)

  • 1 onion, sliced

  • 34 garlic cloves


Instructions

  • Remove giblets from the chicken and pat completely dry with paper towels.

  • In a small bowl, mix together paprika, garlic powder, onion powder, thyme, rosemary, salt, pepper, and smoked paprika.

  • Rub the chicken all over with olive oil or melted butter.

  • Coat the entire chicken evenly with the seasoning mixture.

  • Place sliced onions and garlic in the bottom of the crockpot to create a base.

  • Set the chicken on top, breast-side up.

  • Add small pieces of butter on top of the chicken.

  • Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until internal temperature reaches 165°F.

  • Optional: Transfer to a baking dish and broil for 3–5 minutes to crisp the skin.

  • Let rest 10 minutes before serving.

Notes

  • Do not add water — the chicken will release its own juices.

  • Use a larger chicken for best results and moisture retention.

  • For extra flavor, rub some seasoning under the skin.

  • Save the drippings for gravy or broth.
