Juicy, tender rotisserie-style whole chicken made right in your crockpot with simple pantry spices and butter. This easy slow cooker recipe is perfect for weeknight dinners and meal prep.
Ingredients

1 whole chicken (4–5 lbs)

1 tablespoon paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon smoked paprika (optional)

1 tablespoon olive oil or melted butter

2–3 tablespoons butter (cut into small pieces)

1 onion, sliced
-
3–4 garlic cloves
Instructions

Remove giblets from the chicken and pat completely dry with paper towels.

In a small bowl, mix together paprika, garlic powder, onion powder, thyme, rosemary, salt, pepper, and smoked paprika.

Rub the chicken all over with olive oil or melted butter.

Coat the entire chicken evenly with the seasoning mixture.

Place sliced onions and garlic in the bottom of the crockpot to create a base.

Set the chicken on top, breast-side up.

Add small pieces of butter on top of the chicken.

Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until internal temperature reaches 165°F.

Optional: Transfer to a baking dish and broil for 3–5 minutes to crisp the skin.

Let rest 10 minutes before serving.

Do not add water — the chicken will release its own juices.
