For the Whipped Feta:
8 oz block feta cheese (full fat for best texture)
4 oz cream cheese, softened
2–3 cloves roasted garlic
Zest of 1 lemon
1–2 tablespoons fresh lemon juice
1 tablespoon olive oil
½ teaspoon fresh thyme leaves
Freshly cracked black pepper
For the Burst Tomatoes:
1 cup cherry tomatoes
1 tablespoon olive oil
½ teaspoon dried thyme or fresh thyme
Pinch of salt
Fresh parsley, chopped (for garnish)
For Serving:
Toasted sourdough crostini or baguette slices
Extra olive oil drizzle
Wrap garlic cloves in foil with a drizzle of olive oil. Roast at 400°F for 20–25 minutes until soft and golden. Let cool slightly.
In a food processor, combine:
Feta
Cream cheese
Roasted garlic
Lemon zest
Lemon juice
Olive oil
Thyme
Black pepper
Blend until completely smooth and fluffy. Scrape down sides as needed.
Tip: If you want it extra airy, blend for an additional 30–60 seconds.
In a skillet over medium heat, warm olive oil and add cherry tomatoes. Sprinkle with thyme and salt.
Cook 5–7 minutes until they soften and begin to burst. Remove from heat.
Spread whipped feta onto a shallow bowl or plate.
Top with:
Warm burst tomatoes
Fresh parsley
Drizzle of olive oil
Extra thyme if desired
Serve immediately with toasted sourdough.
