Fluffy pumpkin sheet pan pancakes are baked all at once for an easy fall breakfast. Made with real pumpkin, brown sugar, and warm spices, they are perfect for busy mornings, weekend brunch, and feeding a crowd.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup packed light brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1½ cups milk
  • ¾ cup canned pumpkin puree
  • 2 large eggs
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract

For Serving:

  • Melted butter
  • Warm maple syrup
  • Cinnamon sugar

Instructions

  1. Preheat the oven to 425°F. Generously grease an 18-by-13-inch rimmed sheet pan with butter or nonstick cooking spray.
  2. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a separate medium bowl, whisk together the milk, pumpkin puree, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet pumpkin mixture into the dry ingredients. Stir gently just until combined, being careful not to overmix. A few small lumps are fine.
  5. Pour the batter into the prepared sheet pan and spread it into an even layer.
  6. Bake for 12 to 15 minutes, or until the center is set and a toothpick inserted into the middle comes out clean.
  7. Let the pancakes cool for 3 to 5 minutes, then slice into squares. Drizzle with melted butter and warm maple syrup, then finish with a light sprinkle of cinnamon sugar.

Notes

  • Use plain canned pumpkin puree, not pumpkin pie filling.
  • Do not overmix the batter or the pancakes can turn out dense.
  • Store cooled leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze individual pancake squares for up to 2 months; reheat in the microwave or toaster oven.
  • Add mini chocolate chips or chopped pecans to the batter before baking, if desired.
